2023 Journeyman Rosé – Concrete Fermentation Eggs are one centerpiece of our small winery. Our Rose is produced 100% with this unique vessel. The eggs allow for suspension of the lees (yeast) so that the resultant wine has more palate weight and complexity.
In addition to the use of this rare fermenter, we apply a layered approach by using up to four pristine sources. The majority of this wine is from bleeds, which is removal of juice from freshly crushed red grapes, however about 30% of this wine was from a final thinning pass on our famous PEARL vineyard at 18 – 20 Brix. The result is a wider selection of grapes providing a greater the spectrum of flavor. The Pearl grapes provide a gentle bump of natural acidity and minerality. This Rosé bursts with flavors of strawberry, roses and ripe red cherry.
